Ingredients for 4 people:
- 2 angler fish weighing about 700 g each
- about 100 g green olives with stones
- about 100 g black olives with stones
- about 50 g capers in salt
- about 200 g cherry tomatoes
- 8 anchovy fillets
- 2 cloves garlic and a bit of oregano
- chilli and parsley to taste
- 1 glass white wine ( not sweet )
- a bit of fish stock
- salt and pepper to taste
- 2 spoons olive oil ( if possible extra virgin )
Method:
Cut the angler fish into 4 fillets and open out each fillet, season them with salt, pepper and oil. Brown a bit of garlic in a bit of olive oil, and then add the olives, anchovies and cherry tomatoes cut in half, add the oregano and cook for about 2 minutes. In an oven dish lay out the fillets of angler fish separately already prepared and seasoned, and cover them with the sauce prepared in a frying pan, a bit of white wine and fish stock and put into the oven (first cover the oven dish with aluminium foil). Cook for about 20 minutes at about 220°C.
Before serving the dish, sprinkle with parsley.
