Fillets of Gilt-Head Bream Baked in Foil   09.03.2010



Gilt-head bream is widely used in Italian cuisine, especially in the Northern Adriatic area.
There are various gilt-head bream dishes. This is a recipe for fillets of gilt-head bream baked in foil.







Ingredients for 4 people:

- 2 gilt-head bream (1/2 kg each)
- extra virgin olive oil
- garlic
- parsley
- thyme
- parmesan cheese
- aubergines



Preparation time:  30-40 min



Method:

Line an oven-proof dish with aluminium foil.
Place a layer of finely sliced aubergines on the foil and add the slivers of parmesan.
Fillet the fish and place them on top of the aubergines. Season with some olive oil, thyme and some crushed garlic and parsley.
Place another layer of aubergine slices and parmesan slivers on top. Finally, close the aluminium foil and place in the oven at a temperature of approx. 180°.
